You’ve got to try my new apple cake recipe!
As I was making the 72nd apple crisp this week, because there is nothing better than an apple crisp on a cold January day, (alright – I didn’t make 72 of them it just felt that way) my son Josh asked me for an alternative.
I’m a creature of habit and I bake what I know and what will turn out well. I am famous for my banana chocolate chip muffins and my berry crisp that can be converted to an apple crisp. I make these treats on repeat, because it’s a hit every time. Well, most of the time. Don’t forget about what happened here.
Time for a change!
Josh showed me another recipe. And although I winced and whined and shook my head no, he insisted.
“But what if it won’t work out?” I asked.
“Don’t worry – it’s easy, mom.”
“But I like my apple crisp!”
“I do too, but let’s try this!” He said proudly while typing on his phone to forward me the recipe.
And so I pulled up my socks and picked up my phone to read what was asked of me.
And I was hooked.
Now We’re talking!
First off – it has 5 ingredients. That sold me right away, as I love that about the recipes I choose to create. Ingredients shouldn’t be complicated and if I can pronounce them – all the better!
I think it took me 5 minutes – just 5! To mix everything together. The hardest part was to peel the skin from the apples and cut them up into pieces. And really, that isn’t hard, right? Which I think that took me about another 5 minutes.
Ok – here we go! My new apple cake recipe recipe that is lovingly and admirably adapted from @SmittenKitchen.
The Recipe
INGREDIENTS
- 6 large tart apples
- 3 large eggs
- A cup of sugar
- 1 cup of flour
- One tsp vanilla extract
DIRECTIONS
Scoop up the cut up apples and place them in a prepared baking dish. I went with a round cake one. Mix the rest of the ingredients and pour them over the apples. Bake at 350 for 50 minutes. Take the cake out and let it cool and if you want to get fancy, sprinkle some icing sugar on that baby.
