Get ready to make the hottest new salad dressing. You know which salad dressing I’m talking about. No, not this dressing, but THAT one. You know, the one that is made by Melissa Ben-Ishay? (@bakedbymelissa) That’s all over Tik Tok?
My feed is all about yummy food, coffee, and writers. Yeah, I keep it consistent with the same type of people and things that I follow on the other social media platforms.
Anyhow, this Green Goddess dressing is the hottest new salad dressing, as it always shows up everywhere I turn. Everyone is making it and it looks so freaking good, I thought I might as well get on the bandwagon and make it myself.
But you know the rules!
1. It’s Got To Be Easy!
I love two-to three-ingredient recipes. Something that I could whip up in a flash.
I scanned the ingredients and I said to myself, by golly, I can do this. A handful of ingredients, that I already had in my pantry. Although I did have to run out and get fresh basil.
As usual, I measured out all the ingredients, which is a habit that I learned from my grandmother. Then I plopped them all into my Vitamix and blended away. I didn’t have a shallot, so I used half of a small onion. Yes, I should have bought shallots when I was fetching the basil. Yep – I forgot. 🙂
2. It’s Got to be Yummy!
After I hit the start button on my Vitamix, I couldn’t help but smile. The satisfaction of watching ingredients blend in this baby does not get old.
Everyone under the sun is “going ga ga” for this recipe, who’s to say that I would?
Right?
After a few moments of blending, the moment that I was waiting for arrived. I dipped my finger in to taste it. Yes, I waited until the motor stopped!
The verdict?
Wow. That is some kick-ass salad dressing.
I don’t blame everyone for going ga ga for the hottest new salad dressing. I mean, look at the ingredients! We’re talking superfood city!
Well, let’s just say that I regret not making a double batch.
Before I forget, here is the full recipe. I mixed it with the greens of my choice. If you go on The Today website, where I found the official recipe, she suggests iceberg lettuce, cucumbers, scallions, and chives.
GREEN GODDESS SALAD DRESSING BY MELISSA BEN-ISHAY
- Juice of two lemons
- 2 TBS rice vinegar
- 1/4 cup of cashews
- 2 cloves of garlic
- 1/4 cup olive oil
- 1 small shallot
- 1/3 cup chives (optional)
- 1 cup torn basil leaves
- 1 cup fresh spinach
- 1/3 cup nutritional yeast
- 1 tsp salt
Throw the ingredients into your blender all at once, blend and enjoy!
