The Best Protein Bars

Years ago, someone gave me a recipe for the best protein bars. I made them, devoured them, and never made them again. I don’t know why – maybe I just got busy baking other things. It’s funny, no one in my family asked for them either, even though they were a hit.

It’s time to bring the best protein bars back to the table.

Just recently, I have been needing something to munch on after my workouts. At 4:00 PM. After dinner. Let’s just say that I am in need of a little something sweet, but not too sweet that comes with a high sugar crash.

I want something that is ready and waiting in my fridge. And here it is. This is an easy simple recipe that doesn’t take a century to make. Yes, I am lacking patience in the cooking department. No to mention cooking skills. We all have our strengths.

The best part about these protein bars is that they are dairy-free. They are loaded with antioxidants, thanks to cocoa. You can add nuts if you wish – or not. Remember, you are the chef! Have fun and play around with what extras you want to put into them. I can’t wait for you to try these babies – the best protein bars.

The Recipe

Melt in a saucepan, but don’t boil:

  • 1/2 cup coconut oil
  • 2 -3 drizzles (say 2 TBSP) of honey
  • 2 TBSP cocoa powder

Once the wet ingredients are melted add:

  • 1 cup ground oats – I add them to my Vitamix or any blender to make an oatmeal flour
  • Mix in 1/2 cup sesame seeds (if you can eat nuts add ground almonds, sunflower, or pumpkin seeds)
  • 1 scoop of chcolate protein powder (I like @truvani)

Mix dry and gooey ingredients together Use a spatula to spread on a parchment paper-lined pan. Press down and put into the refrigerator. Chill overnight and cut into squares. Store squares in a container. Enjoy the best protein bars, I sure do, and so does my husband Gordie!
