If I were left on a deserted island, with a choice of food to take along with me, it would be my favourite chocolate chip cookies.
Where to find this recipe? Hold on to your mixing bowls, my friends, because you know that I’m not giving out this recipe so fast! I have a story to tell, so sit back, grab yourself a cup of coffee or smoothie, and read on!
It happened one night
The other night after dinner, my family gathered around our kitchen counter. “I want to make something.” my daughter announced as she loaded the last dish into the dishwasher. As my older son was quick to search for something yummy on his phone I had an announcement myself.
“Hang on there, kiddos! Tonight we make my favourite chocolate chip cookies!”
A look of shock from all those present occurred as I reached into my cookbook cabinet to pull out the most treasured cookbook that I own, Second helpings, Please! Written by the late @norene_gilletz and @bnaibrithcanada and gifted to me at my wedding shower from my grandmother. I mean, how meaningful can you get?
The look of shock continued.
“Trust me – you won’t be sorry. Tonight we are going back to the basics with this tried and true recipe.” As I flipped to the recipe page, I smiled at all the shmutz that was stuck on the page. You could tell that many batches of cookies were made from this wonderful recipe.
Being the non-baker that I am – hey, we all have our strengths – everyone but me took over while I watched.
And guess what happened next?
These 24 mouth-watering, chewy chocolatey cookies came out perfect in the oven and were quickly devoured! When it came to taking a picture for this blog – I had to fight for the last two. That’s how good they were.
Ok – story over. Time for the recipe, which is most admirably and lovingly borrowed from Second Helpings, Please!
My Favourite Chocolate Chip Cookies
- 2/3 Cup of Butter – softened
- 1/2 cup white sugar
- 1/2 cup brown sugar, packed
- 1 egg
- 1 tsp vanilla
- 1.5 cups of flour
- 1/2 ts baking soda
- 1/4 tsp salt
- 6 oz chocolate chips
DIRECTIONS:
Blend butter, sugars, egg, and vanilla. Stir in dry ingredients together and stir into batter. Stir in chocolate chips. Drop from a teaspoon onto an ungreased baking sheet (I like to use parchment paper) about two inches apart. Bake at 350 for 8 to 10 minutes. Cool slightly before eating – if you can wait!
