The Best Broccoli and Avocado Salad

I have been sharing recipes on this website for so long, and I have yet to share the best broccoli and avocado salad that has been a staple in my house. Imagine that.

Well, hang on to your cutting boards, my friends, because guess what? With just a few ingredients, your plates will hold the best broccoli salad that is not only savory, scrumptious, and bursting with nutrition but it only takes minutes to prepare. And you can make it ahead of time, so you can have proper shmoozing time when your guests arrive.

You can still prepare this dish – the best broccoli and avocado salad – ahead of time, while you do other things. Like watch this incredible series or head outside and get some exercise.

The Nutrition Scoop

Before I dive into the recipe, you should know the following nutritional info about the ingredients. Because really, these guys are all superstars. Go ahead, ask any Registered Dietitian, like my pal @shaunalin. She thinks the best broccoli and avocado salad is so good for you and is also so delish! It is a win-win for sure.

Broccoli: Excellent source of fiber. Contains iron, potassium, calcium, selenium, and magnesium as well as the vitamins A, C, E, K, and a good array of B vitamins including folic acid. Broccoli also helps fight and prevent cancer.

Avocado: A healthy fat that can lower cholesterol and triglyceride levels is loaded with fiber and potassium.

Extra Virgin Olive Oil: Rich in antioxidants. Contains vitamins E and K. Helps lower inflamation and protects against heart disease.

Lemon Juice: Contains vitamin C, calcium, potassium, and folate and adds the most beautiful “zing” to any dish. Need I say more?

The Recipe

A bunch of broccoli, maybe two

1 avocado

1 TBS (of each) olive oil, lemon juice and grainy mustard

Wash and cut up broccoli into bite-size pieces until bright green. Place into a serving bowl and set aside to let it cool. Next, make the dressing from the lemon juice, olive oil and grainy mustard. Mix well. You made need a bit more of each, depending on how much broccoli you end up steaming. Cut up the avocado into bite size pieces and scatter them around the broccoli. Pour the dressing, gently toss and enjoy!
