Got celery? Make celery soup! What else are you going to do with that stalk of celery that just got delivered in your weekly veggie box? Since the pandemic began, I have been taking advantage of @thefruitcart.ca and @mamaearthorganics. These companies have been my savior! With a click of a button, the best local fruits and vegetables can be delivered right to your door.
Before I get into how to savour celery in a soup form, let’s explore other ways on how you can enjoy it.
How to eat it.
- On its own. Maybe with some hummus.
- “Ants on a Log” with any nut butter and raisins.
- Add texture to egg or tuna salad.
- Add to a stir-fry.
And then there’s me, who wants to turn any vegetable into some sort of soup. I would blame it on the current weather. I live in Canada (brrr!), it’s Mid October and I’m spending a lot of time outside. More than usual and for good reason. Hello Pandemic. There’s nothing better than enjoying a warm bowl of soup after being outside all day – especially at night. Geez, wait until January! I’ll be eating soup in my sleep.
And one more thing (I promise, this is the last thing before the recipe!) I have to mention all of the health benefits of celery – I mean come on – there’s gotta be a purpose to what you are eating. Thank you, (again) @healthline you are a wealth of information.
What’s so good about it?
- Loaded with antioxidants
- Reduces inflammation
- Supports digestion
- Vitamins A, C, and K plus Potassium and Folate
- Has an alkalizing effect. Minerals like magnesium, Iron, and Sodium can help neutralize acidic foods.
Just to clarify – there is a difference between a stalk of celery and a rib of celery. A stalk is a “bunch” of celery and a rib is one piece. You can read more about the difference here.
Celery Soup Recipe
- 1 stalk of celery, chopped.
- 1 -2 TBS of vegetable oil
- A medium onion, chopped
- 3 garlic cloves, crushed.
- A large white potato
- 4 – 5 cups of water or veggie broth.
- Salt and pepper to taste
Instructions:
Crush the garlic and let them sit for a while (maybe 10 minutes) in a small dish on the counter in order to create Allicin. In a large pot, pour in the oil and stir fry the onion and garlic for about 5 minutes until soft. Add in the celery, potato, and stir for 5 minutes. Add the water or broth and make sure it covers the vegetables evenly. Let cook for about 25 minutes until all the vegetables are soft and mushy. Let cool and bring out the hand blender and blend away! Feel free to add sour cream, dill, chives, or even Sriracha. Yep – my son decided to put that on his celery soup. Whatever.
