Fast, easy, and tasty chicken balls!

When I want a no-brainer dinner, I always make these fast, easy, and tasty chicken balls by @jamiegeller. I have been using this recipe for a while now and it never seems to disappoint. Even my pickiest eaters devour them!

Fast. Easy. Tasty.

  • Fast – They literally take 5 minutes to prepare.
  • Easy – The ingredients are just a few and are not a mile long.
  • Tasty – The fresh garlic and parsley bring out the most intense flavours!

All you have to do is throw everything into a bowl, mix it around, form into balls, stick them on a baking sheet, and bake them. Sound easy? It is!

The official recipe says to cook them in chicken broth, but I bake mine. It totally works. Less clean up, too! I wasn’t kidding when I said these were fast, easy, and tasty chicken balls!

To complete the meal, add your favourite sides and you can carry on your merry way. Perhaps a recipe like this one.

You can even make a double batch, freeze half, and a month later, pull them out of your freezer, throw them on a baking sheet and bake them until they have a golden and crispy covering. You will feel like a hero. A freaking hero. Yes, you will. At least I do.

Chicken balls by Jaime Geller

Ingredients

  • 2 lbs. ground chicken
  • 2 eggs, slightly beaten
  • 1 cup bread crumbs
  • 1 tbsp. fresh chopped parsley
  • A can chicken broth plus water to equal 2 cups (I omit this step)
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 4 Tbsp. olive oil
  • 1 tsp. chopped garlic

Preparation

  1. Mix the ground chicken with eggs, breadcrumbs, and parsley. Add 1/3 cup broth, salt, and pepper to chicken mixture. Mix.
  2. Shape chicken mixture into 20 balls.
  3. At this point, you can skip steps 4 & 5 and put them on a foil-lined cookie sheet and bake them at 350 for about 20 minutes. Or, you can follow the next two steps:
  4. In skillet heat oil with garlic and brown chicken balls on all sides.
  5. Add the 11/2 cups broth to the skillet. Cover tightly and simmer for 15 to 20 minutes. Can serve right away, reheat later, or freeze for another day
