Yummy & Healthy Fudge

Yummy & healthy fudge! This is the answer to your chocolate cravings without the guilt! You’re welcome.

Yummy? Check.

Fudgy? Check.

Healthy? Check!

Did anyone see the recipe in last weekend’s @globeandmail? I did and I couldn’t take my eyes off of it.

I just had to make it.

Why?

It had just a few ingredients, that I could put in my blender and voila – I would have fudge – without refined sugar!

In case you missed it, here’s the recipe for yummy and healthy fudge.

YUMMY & HEALTHY FUDGE

Ingredients:

½ cup refined coconut oil

¾ cup cocoa powder (preferably Dutch-processed)

¾ cup creamy almond butter, or nut butter of choice

⅓ cup pure maple syrup or honey

1 teaspoon pure vanilla extract (optional)

⅛ teaspoon kosher salt (optional)

Flaky sea salt, for garnish (optional)

INSTRUCTIONS:

Line a 9-inch-by-5-inch loaf pan or another small baking pan with foil or parchment paper. The size of the loaf pan will determine the thickness of the fudge. An 8-inch-by-8-inch pan will yield thinner fudge. You can also use a muffin tin; line 12 cups with paper liners. Melt the coconut oil in a saucepan over medium-low heat or in the microwave for 30 to 60 seconds. Stir in the cocoa powder, nut butter, maple syrup, and, if using, the vanilla and kosher salt until completely smooth. Pour the fudge into the prepared pan. If desired, garnish with flaky sea salt and/or other toppings. Refrigerate until chilled and firm, about 2 hours. Using a sharp knife, cut the fudge into squares. Store in the refrigerator for up to 1 month.

Easy right?

These ingredients are packed with a powerful nutritional punch.

Here’s the scoop about what’s so great about the ingredient list.

Thank you, @Healthline, and @livestrong_com for providing the scientific information that I tried very hard not to plagiarize.

Coconut oil

It’s hard to imagine that this dirty looking brown melon thing that you see hanging up in a palm tree has so many health benefits. The oil that is taken from coconuts is packed with MCT, which stands for Medium-Chain Triglycerides. When you consume MCT, it goes straight to your liver. Your body uses it as energy and then turns them into Keytones which have a powerful and positive impact on your brain. Researchers are studying how Ketones can help those affected by epilepsy and Alzheimer’s disease.

MCT may also reduce your hunger because Ketones’ help can reduce a person’s appetite. So, it would be a great idea to have one of these pieces of fudge right before dinner!

Cocoa Powder

Rich in Polyphenols! I know, what the heck is that? It’s an antioxidant, which means that it fights free radicals in your body. Free radicals are compounds that cause illnesses like heart disease and cancer in your body if they are too high. So, by eating foods that are high in antioxidants, it helps keep your free radicals at a healthy level.

Almond Butter

You can use any type of nut butter in this recipe, but if you were to choose Almond Butter, here are the benefits.

Fibre, Vitamin E, Calcium, Potassium, Biotin, Magnesium, and Zinc.

By the way, those that consume nut butter are less likely to suffer from heart disease or type two diabetes. In addition, contrary to the number of calories per serving, nut butter does not lead to obesity.

Vanilla Extract

100% Vanilla Extract will not only transform the flavor in everything you bake, but it also contains a compound called vanillin, which has an antioxidant, antidepressant, and antitumor effect. It also has antibacterial properties that help prevent infection.

I hope you enjoy this yummy & healthy fudge as much as my family and I did!
