This easy yummy broccoli & avocado salad is my go-to salad for any social gathering, pot-luck or for these days, the perfect staple for my immediate family.
This salad takes literally 5 minutes to prepare and gets five stars every time I prepare it. The bonus part is that it’s also so good for you, too!
What is it that makes this salad kick the pants off of any traditional iceberg tomato and cucumber salad – which I am still a fan of, just not today, writing this blog. 😉
The combination of the crunchy and crisp broccoli, the smooth and creamy texture of avocado married by the tart taste of the lemon and mustard dressing is nothing but perfection.
My mouth is watering as I type this.
Before we grab out our knives and start chopping away at the broccoli, let’s see why this easy yummy broccoli & avocado salad is so fantastic for you.
The broccoli: Full of fibre, a cancer fighter and lowers cholesterol, especially when steamed.
The Avocado: Rich in healthy fats, healthy for your heart and has loads of fibre.
Ok, let’s get started!
The Recipe
1 pound broccoli
1 ripe avocado
2 tablespoons extra virgin olive oil
2 tablespoons freshly squeezed lemon juice
1 tablespoon grainy prepared mustard
Don’t be afraid to use those broccoli stems! They are just as nutritious as the florets. In addition, you will get more bang for your buck if you use the whole broccoli. More veggies = less waste = fewer trips to the grocery store.

How To:
Steam the broccoli until it’s bright green. Place it into a bowl to cool off. Cut up the avocado into cubes. Mix the dressing ingredients into another bowl and whisk. Pour dressing onto the broccoli and avocado and enjoy this easy yummy broccoli & avocado salad!
