When you typically see the ultimate chocolate chip banana muffin, it can be quite deceiving! They look healthy, but most store-bought ones hold up to 600 calories and are loaded with unnecessary fat. Save your $$ along with the extra preservatives that you don’t need and make them yourself.
It’s time to make your own!
Baking the ultimate banana chocolate chip muffin is much easier than you think and your whole family will thank you, so consider making a double batch!
Mosey on over your kitchen, put on some tunes and whip up these babies. The batter will be ready in about 3 songs or less. (15 minutes). Baking is just another 15.
They are the perfect thing to grab in the morning, along with a hard-boiled egg, a slice of cheese and/or a piece of fruit, depending on the degree of your hunger in the AM.
Here’s an idea – make ‘em and freeze ‘em. Fresh homemade muffins can be ready in 30 minutes, defrosted on the counter, or if you can’t wait and need them right freakin’ now, rest them on a paper towel and pop them in the microwave for 30 seconds.

The Recipe
INGREDIENTS:
3/4 cup ripe bananas, mashed (about 1 1/2 medium bananas)
1/2 cup granulated sugar
1/4 cup vegetable oil
egg
1 tsp vanilla
One cup all-purpose flour
1 tsp each baking powder and baking soda
1/2 cup low-fat plain yogurt (or low-fat sour cream)
1/4 cup semi-sweet chocolate chips
DIRECTIONS:
1. Preheat oven to 375ºF. Spray 12 muffin cups with vegetable oil.
2. Using an electric mixer, beat together bananas, sugar, oil, egg and vanilla in a large bowl until well mixed.
3. In another bowl, combine flour, baking powder, and baking soda. Stir the banana and flour mixture together. Stir in the yogurt. Fold in the chocolate chips.
4. Divide the batter among the prepared muffin cups and bake in the center of the oven for 15 minutes and a tester inserted in the middle of the muffin comes out clean. Wait for them to cool down and enjoy these ultimate chocolate chip banana muffins!
